Spokane has a reputation as a meat and potatoes sort of city, but there are some options for the adventurous Vegan or Vegetarian. Boots Bakery and Lounge: Spokane's only all vegan restaurant, many items are also gluten free. Menu changes daily. (Downtown)
Hills': Offering a small selection of vegan and vegetarian options, the food is great and has been featured on the Food Network. (Downtown)
Mizuna: Mizuna started as a fine dining all vegetarian restuarant, but now serves meat options too, however they always have great vegan and vegetarian options and make and effort to keep the ingredients in the kitchen separate. (Downtown)
Queen of Sheba: Spokane's first Ethiopian restaurant, located in the Flour Mill, great food and resonably priced. The Vegetarian Sampler is all Vegan!
Saranac: Pub style food, with some great vegan options. (Downtown)
Stella's Cafe: Great little sandwich shop, offering many vegan and vegetarian options, and Trivia on Saturday nights.
Taste of India: I've eaten at a lot of Indian restaurants but this is my favorite. They are very accomodating of dietary restrictions and offer all the traditional favorites. (North Division)

Celebrations Sweet Boutique
A cupcake and cookie boutique with a location in the Garland District and the Spokane Valley
Zombie themed donut shop located a mile or so from campus on North Division, offering Vegan donuts or donuts with bacon, whatever strikes your fancy.
Spokane's most retro donut establishment, right in the Gonzaga district.
Downtown Spokane's French cafe, best place in town to get a French pastry.
The Milk Bottle
Retro ice cream and burger place located in the Garland district. The building looks like an actual milk bottle!
Bakery and coffee shop near Whitworth University on the northside.
Locally ownded bakery and coffee shop with a selection of beer and wine as well. Fantastic and place to meet with friends on the South hill located at 3223 E. 57th ave.
The Scoop Spokane
The Scoop is a locally owned family business that serves Brain Freeze Ice Cream, Roast House Coffee, Flying Pig Baked Goods, Sweetwater Bagels and many other delicious goodies and sandwiches, offering vegetarian, gluten free and vegan options.

A few markets that are near campus and worth highlighting:
Emerson-Garfield Farmes' Market
The market takes place on Friday from 3 to 7pm in the parking lot of Knox Presbyterian Church at 806 W Knox Ave [map] in the Emerson-Garfield Neighborhood from June to October.
Kendall Yards Night Market
A new neighborhood recently developed on the north bank of the Spokane River, with great restaurants, views and shops. Farmer's markets takes place on Wednesdays, mid-May to mid-October 4:00pm to 8:00pm.
Perry Street Thursday Market: Perry is a fun little neighborhood and Spokane's closest thing to a true "district". The Thursday market takes over the street during the summer and has a variety of vendors.
Spokane Farmer's Market:
Located at Fifth Ave. Between Browne and Division just south of the freeway. Wednesdays, 8 a.m.-1 p.m. and Saturdays, 8 a.m.-1 p.m. May to October.
Green Bluff Growers: "an association of small family farms and food stands. Seasonal activities include pick-your-own fruit and annual festivals," since 1902.
Part of a large national supermarket chain, most stores offer a natural and organic section.
Huckleberry's Natural Market
Spokane largest natural and organic market, located on Monroe street on the lower south hill.
Main Market Co-op
Located near campus, Main Market Co-Op is a great little shop offering organic produce, dairy and meat, a great deli and salad bar and many vegetarian options. Membership is not required to shop at the Co-op.
Rosauer's on 29th or North Division Y
Rosauers is a locally run supermarket with many locations around town. The North Division store and the 29th store include a natural "Huckleberry's" section, which carries similar products to Huckleberry's Natural Market.
Another locally run supermarket with some natural and organic options. They also stock local produce when available.
